Great, love the flavor. Will buy A LOT more, will be a staple in the kitchen.

I was concerned with reviews, greasy and hard to peel.

Greasy, I fried some, no extra grease in the pan, grease level similar to DRY shoulder bacon. Did not have to add butter, but close. Least grease of all sausages I have tried. Can't wait to get some more and smoke it.

Hard to peel, Peels like an onion, easy and hard, but peels easy with a knife to help.
